The natural amphitheater formation of the Plešivica hills provides optimal sun exposure and air drainage. Cold air flows down from the Žumberak peaks at night, while warm days allow for slow, even ripening. The limestone bedrock ensures excellent drainage while retaining essential minerals that define the region's distinctive minerality.

Plešivica sparkling wines are produced using the traditional method (méthode traditionnelle), with secondary fermentation in bottle and extended aging on lees, typically 18-36 months for premium cuvées.
